This is a take on Jamie At Home’s, Cauliflower Fritters. His fritters are cut up rather large and chunky. I made mine popper-like, with the image of popcorn in my head.
Although the curry flavour might not appeal for children, this is one way to get them to eat their veges. As far as I know, no one would refuse fried-anything. Cauliflower in itself has rather bland-ish flavour. So it’s a perfect canvas for the addition of curry and spices.
CURRIED FRIED CAULIFLOWER RECIPE
Ingredients;
1 half-head of cauliflower, break it up into florets
2 cups tempura flour
Cold water
Oil for frying
Spices;
2 tablespoons curry powder
1 tablespoon chilli flakes
1 1/2 teaspoon cumin powder
1 teaspoon coriander powder
1 teaspoon mustard seeds
1 teaspoon salt
Black Pepper
Steps;
1. Mix all the spices together. Place your tempura flour in a large bowl, whisk in cold water till you get a consistency that coats the back of the spoon.
2. Toss in your cauliflower florets and the spices. Mix everything together.
3. Heat oil till frying temp and do a test-fry with one floret first. Taste and see if you like the seasoning. If not, adjust.
4. Fry all the florets till they’re crispy and crunchy. Eat with lemon juice drizzled all over.
