Sift and mix together dry ingredients; flour, baking soda, baking powder, salt, cinnamon and sugar.
Beat together liquids; the melted butter, milk, egg and vanilla extract.
Mix the wet ingredients to the dry. Use a whisk to mix it thoroughly and doesn't have to be super-smooth.
Add the mashed bananas and give it a final stir.
Leave it to sit for about 30 mins.
I like to cook my pancakes on a rather dry pan so i just rub it lightly with some melted butter.
Cook pancakes 1 min on first side. Don't wait for too much bubbles to form on top, flip it to the other side and let it cook through. You might get some wet 'tails' out of the pancake circle, but don't fret, just push it back in or cut it off when it's cook and nibble on it while you do the other pancakes. The reason for flipping it over before it's really cooks is, I find this really gives it that soft, fluffy outcome on the inside.
Eat with your favourite toppings like maple syrup or butter.
